Very rarely do I come up with words that I think will be remembered long after I am gone. This post will be the exception. In all of my years in the business, I dont think I have ever come up with a thought more profound than this one. Um well except for all the thoughts in my book on serving. This is a different type of thought though. This might allow restaurants to become exceedingly profitable and servers to make the kind of money any other professional should expect.
If you want a more profitable restaurant, I am going to blow your mind with the simplicity of this idea.
There could be awards named after me at restaurant conventions after I share this idea.
I could get in the restaurant Hall of Fame with this one concept.

Restaurants should give away desserts
OK, I know some of you are disappointed. Don’t worry though, there is a second part to this idea.
Restaurants should charge for extra spoons/forks
I will tell you that most every table that orders desserts has at least one guest who will make the following statement, “I would really like something, but someone has to split it with me.” After the 59,937th time I heard this statement, it hit me. We need to stop charging for desserts and start charging for forks. So let’s do the math, 4 guests split 1 dessert at $7 adds $7 to the check 1 dessert with 4 forks at $5 per fork adds $20 to the check This almost tripled the price and more than tripled the profit margin. I will be the first to say it, I am incredibly generous for giving away this idea for free. I am asking for no credit on this one even. You can say you came up with it on your own. All I ask in return is a free dessert when I come to your restaurant. I will be the guy who brought his own fork.
